Creamy Green Goddess Soup Recipe
Get all your greens in and enjoy every bite with this green goddess soup. I don’t know about you, but the only thing I really love about winter is that it’s soup season. If you’ve never made soup before, don’t worry, I promise it’s sooo easy and once you do it once you’re golden! This is one of my faves and I’m pumped to bring it back each winter.
Here’s what you’ll need:
💚 big soup pot
💚 large zucchini
💚 big head of broccoli
💚 head of kale
💚 head of swiss chard
💚 bunch of scallions green tops only (or onion)
💚 a can of coconut milk (make sure yours doesn’t have added gums!)
💚 emulsion blender (a great investment and promise you’ll use it a ton for salad dressing, soup, etc)
💚 twoish quarts of bone broth (I used one chicken one beef - pasture raised, organic) - you can also use one and then add some water
💚 garlic infused olive oil (or just throw some garlic in the pot, but if you have ibs or a sensitive stomach use the oil!)
💚 salt + pepper + turmeric
💚 cilantro for garnish
*if you don’t have these exact ingredients your soup will still be perf! I never measure, I just throw it in.
Directions:
🫶 wash and chop your veggies
🫶 put the pot over medium heat + add oil
🫶 add scallions or onion, and once you smell the aroma…
🫶 throw the rest of the veggies in
🫶 add bone broth (or water, or a combo) until the greens are covered in liquid
🫶 cover and bring the pot to a boil, then simmer for 25 min
🫶 remove from heat, add coconut milk, pepper and turmeric
🫶 blend with emulsion blender to your liking
🫶 add to bowl and garnish with cilantro + olive oil
🫶 voila you’re done, ENJOY, and tag me if you make it

*PS I always salt (sea salt!!) to taste after it’s done
